Ezie Blueberry Muffins

To Die For Blueberry Muffins




Bahan-bahan nya

1 1/2 cawan Tepung serba guna
3/4 cawan gula castor
1/2 sudu kecil garam
2 sudu kecil baking powder
1/3 cawan margerine
1 biji telur
1/3 cawan susu segar
1 cawan blueberries segar

Bahan-bahan Untuk crumps

1/2 cawan gula
1/3 cawan tepung serba guna
1/4 cawan mentega, di potong dadu
1 1/2 sudu teh serbuk kayu manis

Cara-caranya :

Panaskan oven kepada 200 degrees C. Siapkan mangkuk kertas untok muffins.

Campurkan 1 1/2 cawan tepung, 3/4 gula, garam dan baking powder. Didalam mangkuk kecil, masukkan margerine, telur dan susu, kacau hingga sebati. Campurkan campuran margerine kedalam tepung. Kacau sehingga semuanya sebati (jangan '0ver' kacau, nanti muffin jadi keras).
Masukkan adunan kedalam mangkuk kertas muffins dan letakkan kedalam loyang. Sebelum masuk oven, tabur kan crumps keatas muffins. Bakar di dalam oven yang telah dipanaskan 200C selama 25 minit.

The results : Muffins yang rangup diatas, dan moist/lembut di dalam.


Cara membuat crumps :

Campurkan semua 1/2 cawan gula, 1/3 cawan tepung, 1/4 cawan butter dan 1 1/2 sudu teh serbung kayu manis. Kacau dengan menggunakan garfu. Taburkan diatas muffins sebelum di bakar.

Masukkan adunan kedalam muffin cups

Taburkan Crumps sebelum dibakar

Bakar selama 25 minit didalam oven 200C

Sejukkan Muffin diatas cookie rack

Muffin tak cantik, tapi rasanya sedap

Sprinkle with powdered sugar

Ready to be packed and delivered.

Ezie Salmon Steak with Portobello Mushrooms

When Jazz had enough of porridge or abalone bee hoon, he will ask me to cook something that is easy to the stomach. I came up with a simple Salmon Steak which I cooked during our recent vacation.

Ingredients:

1 salmon steak
½ teaspoon ground black pepper
1 teaspoon salt
2 tablespoon fresh lemon juice
(Marinate salmon with black pepper, salt, and lemon juice for 15 minutes)

2 Portobello mushrooms
Bunch of sweet peas
1 potato (boil til soft and cut in half)
½ onion (juliened)
Salt and pepper to taste
Slice of lemon
4 tablespoon Olice Oil
Butter
4 tablespoon fresh milk
Cheese spread
2 teaspoon fresh chopped parsley

Method :

Clean mushrooms and cut its stalk. Spread butter onto the bottom of mushrooms til all covered. Heat 2 tablespoon of olive oil in pan, fry the mushrooms on medium heat until it turn brown. Sprinkle with salt and pepper. Set aside.

With the left over oil in the pan, fry the salmon steak. Start with both side of the salmon and pun on its skin slowly. Turn the fish and cook on medium heat until it turn milky pink. Do not overcook the salmon. It is done when it loses its translucency and becomes flaky. Once cooked, transfer it on your warm serving plate.

Add 2 tablespoon of olive oil in pan. Fry the onion, add in sweet peas and salt and pepper to taste. Set aside after cooked. With the left over oil, add fresh milk into the pan, turn the fire to low. Stir it so it won’t dry up. When it turned brown, pour onto the salmon. Sprinkle fresh chopped parsley on Salmon steak.

Clean the potato and boil til soft. Cut it into half, and spread cheese spread onto its surface. Arrange all the food onto your serving plate. Add a slice of lemon on the salmon. Enjoy a simple and healthy meal.

Ezie Corned Beef Burger


Yesterday morning, I was too lazy to go to the market. So, for breakfast I just cooked up whatever I can find from my food cabinet. The result, as the words from my Big Guy was "Ma, this is better than Sloppy Joe!"

Ingredients :

1 can of Corned Beef (Libby's)
1 onion (slice thinly)
1 red chilli (slice thinly)
4 portobello mushrooms - slice
Single wrapped Kraft cheese
Baby lettuce, cherry tomato, zuccini
4 table spoonOlive Oil
Butter
6 Burger buns

Method :

Heat olive oil in pan, fry onion and chilli till fragrant. Add corned beef and mix till all cooked. Put aside. Add olive oil in the same pan, and fry portobello till brown.

Butter the buns and base with baby lettuce, tommato and zuccini. Add cooked corned beef, mushrooms, cheese and finish with the top bun.

Voila ! you'll have corned beef burger. Yummeh!

Ezie Cupcakes

I have another order of my cuppies to be delivered this morning. So I've spent last night baking the little darlings until 3 am. I've made the original cupcakes and cinnamon cupcakes. By the time I reached the office and delivered the cupcakes, I was too thrilled to see how the customer fair my baking skill. Well, he is very satisfied and I am elated that my cuppies are picking up sales!









So, I guess, no harm of sharing the happiness with you!

Ingredients :
2 1/4 cup self-rising flour
1 1/3 cup castor sugar
1 teaspoon of baking powder
1/2 teaspoon salt
1/2 cup butter (room temperature)
1 cup fresh milk
1 teaspoon vanilla
2 large eggs

Heat oven on 180C.
Combine flour, sugar, baking powder and salt in a mixing bowl. Add butter, milk and vanilla. Beat for 1 minute on medium speed. Add eggs to mixture. Beat for 1 min on medium speed, and on high speed for 1 1/2 mins, until well mixed.

Spoon cupcakes batter into paper cups which are place in a cupcakes/muffin pan. fill 1/2 to 2/3 full.

Bake for 20 minutes or until toothpick inserted in centre comes out clean. Cool for 5 minutes in pan then remove and place on wire racks to cool completely.

Once cupcakes are completely cooled, frost with royal icing and top with shaved dark chocolate.


Royal Icing

4 cups sifted icing sugar
4 large egg whites
2 table spoon freshly squeezed lemon juice

Whisk egg white until froth. Add icing sugar, a little at a time. Whisk on medium for 1 min. Add in lemon juice. Whisk on high speed until you get stiff peaks on icing

Make sure that cupcakes are completely cool before you put the icing on.

Opor Itek

Bahan-bahan :

1 ekor itek di potong 12
1 biji kelapa, di ambil santannya (1/2 mangkuk pekat dan 2 mangkuk cair)

(A)
1 sudu makan ketumbar biji
1 sudu makan jintan putih
1 sudu makan jintan halus
(di sangar dan dikisar halus)

(B)
10 ulas bawang merah
4 ulas bawang putih
2 biji bawang besar
3 biji lada merah
1 inci halia
(dikisar dengan sedikit air)

1 inci lengkuas (dititik)
1 batang serai (dititik)
2 batang kayu manis
1 sudu kecil serbuk kunyit
5 helai daun limau purut
1 helai daun salam
4 biji lada hijau (dibelah tengah dan dibuang biji)
Garam dan perasa secukup nya
Minyak untuk menumis

Cara-caranya

Panaskan minyak, dan tumis bahan-bahan (A) yang telah dikisar sehingga naik bau. Masukkan bahan-bahan (B), dan tumis sehingga garing. Masukkan lengkuas, serai, kayu manis dan serbuk kunyit. Tumis lagi sehingga naik bau. Masukkan santan cair dan itek yang telah dibersihkan. Kemudian masukkan daun limau purut dan daun salam. Masukkan garam dan perasa secukupnya.
Masak diatas api yang sederhana, kacau sekali sekala supaya santan tidak pecah kemudian, masukkan lada hijau. Apabila itek telah empuk, masukkan santan pekat dan masak lagi sehingga mendidih, kacau sekali sekala.

Hidangkan dengan nasi panas.
