When Jazz had enough of porridge or abalone bee hoon, he will ask me to cook something that is easy to the stomach. I came up with a simple Salmon Steak which I cooked during our recent vacation.
Ingredients:
1 salmon steak
½ teaspoon ground black pepper
1 teaspoon salt
2 tablespoon fresh lemon juice
(Marinate salmon with black pepper, salt, and lemon juice for 15 minutes)
2 Portobello mushrooms
Bunch of sweet peas
1 potato (boil til soft and cut in half)
½ onion (juliened)
Salt and pepper to taste
Slice of lemon
4 tablespoon Olice Oil
Butter
4 tablespoon fresh milk
Cheese spread
2 teaspoon fresh chopped parsley
Method :
Clean mushrooms and cut its stalk. Spread butter onto the bottom of mushrooms til all covered. Heat 2 tablespoon of olive oil in pan, fry the mushrooms on medium heat until it turn brown. Sprinkle with salt and pepper. Set aside.
With the left over oil in the pan, fry the salmon steak. Start with both side of the salmon and pun on its skin slowly. Turn the fish and cook on medium heat until it turn milky pink. Do not overcook the salmon. It is done when it loses its translucency and becomes flaky. Once cooked, transfer it on your warm serving plate.
Add 2 tablespoon of olive oil in pan. Fry the onion, add in sweet peas and salt and pepper to taste. Set aside after cooked. With the left over oil, add fresh milk into the pan, turn the fire to low. Stir it so it won’t dry up. When it turned brown, pour onto the salmon. Sprinkle fresh chopped parsley on Salmon steak.
Clean the potato and boil til soft. Cut it into half, and spread cheese spread onto its surface. Arrange all the food onto your serving plate. Add a slice of lemon on the salmon. Enjoy a simple and healthy meal.
