Ezie Cupcakes

I have another order of my cuppies to be delivered this morning. So I've spent last night baking the little darlings until 3 am. I've made the original cupcakes and cinnamon cupcakes. By the time I reached the office and delivered the cupcakes, I was too thrilled to see how the customer fair my baking skill. Well, he is very satisfied and I am elated that my cuppies are picking up sales!









So, I guess, no harm of sharing the happiness with you!

Ingredients :
2 1/4 cup self-rising flour
1 1/3 cup castor sugar
1 teaspoon of baking powder
1/2 teaspoon salt
1/2 cup butter (room temperature)
1 cup fresh milk
1 teaspoon vanilla
2 large eggs

Heat oven on 180C.
Combine flour, sugar, baking powder and salt in a mixing bowl. Add butter, milk and vanilla. Beat for 1 minute on medium speed. Add eggs to mixture. Beat for 1 min on medium speed, and on high speed for 1 1/2 mins, until well mixed.

Spoon cupcakes batter into paper cups which are place in a cupcakes/muffin pan. fill 1/2 to 2/3 full.

Bake for 20 minutes or until toothpick inserted in centre comes out clean. Cool for 5 minutes in pan then remove and place on wire racks to cool completely.

Once cupcakes are completely cooled, frost with royal icing and top with shaved dark chocolate.


Royal Icing

4 cups sifted icing sugar
4 large egg whites
2 table spoon freshly squeezed lemon juice

Whisk egg white until froth. Add icing sugar, a little at a time. Whisk on medium for 1 min. Add in lemon juice. Whisk on high speed until you get stiff peaks on icing

Make sure that cupcakes are completely cool before you put the icing on.
